This is one recipe I have counted on over the years, in order to get my kids to eat all their veggies and get a “completely balanced” meal!

It is full of vitamins and anti-oxidants. It is a no yeast and healthy recipe!

Ingredients Per Serving

1 boned and shredded chicken thigh = protein
1/4 cup cooked brown rice or millet = grain
1/4 cup raw carrot sliced = root vegetable
Small wedge of red cabbage = red vegetable
1/4 cup broccoli florets = green vegetable
1/4 cauliflower florets = white vegetable
2 handfuls of spinach leaves = leafy green vegetable
1 tsp. butter or olive oil
sea salt, miso or kelp to taste

Place steamer basket and half a cup water in pot with lid. Bring water to a boil, and then reduce to medium heat. Add butter or oil. Place chicken in steamer with rice. Cover and steam for approximately 10 minutes. Add carrots and cabbage.

After four minutes, add broccoli and cauliflower. When done, add spinach for one minute. Add salt or miso to taste.

Serves one hot bowl of healthy stew!
